For a wonderful chicken marsala recipe, easy and quick to make, try this: In a shallow bowl, mix together ¼ cup all purpose flour, ½ tsp salt, ¼ tsp ground black pepper and ½ tsp dried oregano. Use this flour mixture to coat four chicken breast pieces that have been pounded and flattened to about ¼ inches thick.

In a large, hot skillet melt 4 tbsp of butter and 4 tbsp olive oil together. When melted, brown the chicken pieces. When chicken is brown on both sides, add 1 cup of sliced mushrooms. Cook mushrooms with chicken and pour in ½ cup Marsala wine and ¼ cup cooking sherry. Cover the skillet and simmer the chicken in the sauce for about 6-7 minutes then turn. Cook a remaining 5 minutes until no longer pink in the middle.  Serve this chicken marsala recipe, easy to make, with pasta for a delicious and satisfying meal.

If you want something a bit different, try stuffed chicken marsala. Make the delicious cheese filling first by adding ½ cup smoked provolone, 1 cup of shredded mozzarella, ¼ cup grated parmesan, ½ cup of breadcrumbs, ½ tsp fresh minced garlic, ¼ tsp crushed red pepper, 2 tbsp sundried tomatoes, 1/3 cup sour cream and ½ tsp salt and pepper in a bowl. Stir together and sit aside.

Next step in the stuffed chicken marsala recipe is to prepare the chicken. Take 2 lbs of boneless, skinless chicken breast and butterfly them. Pound them to about ¼ to ½ inch thick. Add a bit of stuffing equally to the chicken breasts and fold the chicken back over. Prepare a skillet add 4 oz of olive oil until sizzling. While that is heating, in another bowl mix 2 cups of flour and salt and pepper to taste. Coat chicken with flour mixture and sauté in oil until brown.

Put browned chicken in a glass baking dish and continue to cook for 10 – 20 minutes at 350 until cooked though. While the chicken is cooking, in the sauté pan add 1 small, chopped onion and cook alone for 2 minutes. Add 6 cups of thinly sliced mushrooms and continue to cook until onions are translucent. At that point add 24 oz of Marsala wine, then 8 ounces of heavy cream.

Remove chicken from oven, place on plate and cover with the Marsala wine sauce. Serve stuffed chicken marsala warm and piping hot. It goes well with your favorite mashed potato recipe.
